Breaded Cod fillet with Tomato in warm Bearnaise

  • Take a cod fillet of +/- 200 gr per person and paneer in herb breadcrumbs. Fry the fillets in the pan and serve with pommes pont-neuf. Hollow out a tomato and add the warm Bearnaise. Finish with a sprinkle of leek sprouts.
